I think that everyone in New York City read last week's article by David Leite on the Quest for the Perfect Chocolate Chip Cookie. One of the main tricks from the article is to rest your dough for 36 hours before baking the cookies in order to improve the flavor. In my work as a chef I have often made cookie dough in advance and baked to order. I knew that refrigeration had beneficial effects although I had never tested the theory to the extent that David Leite did for the article.
That is an awesome idea... I can't wait to try this out for myself. I wonder if it works for brownies too.
So it looks like it's not all gloom and doom after all. A few recent studies have managed to find the slim silver lining of climate change. Below, a look at the three small positive outcomes of global warming.
Thank you dogbert for the articles with a different perspective. I do believe that humanity should try to limit its footprint on the environment. Also, I totally support alternative fuels like electricity and hydrogen. However, even scientists don't agree on the issue of global warming and CO2. It seems to me that scientists are only looking for the data that will support their argument, and aren't really looking at the "big picture". One actual fact to consider is that the earth has gone through natural heating and cooling cycles without the influence of humanity.
