I'm a little surprised that you included Erector sets and kit cars in your list. Both were pretty mainstream.
I had a Gilbert Erector set in the 50's -- it was wonderful. Built a lot of projects with it. They had cleverly designed pieces that could be put together into 'girders' as well as more specialized parts.
Actual Gilbert sets were ( and probably still are) pretty valuable.
There are new 'Erector sets', but they seem crappy by comparison.
As for kit cars, they were really a big deal for a while. Often built on VW or Fiero running gear, they were a poor man's exotic car. Shelby actually went after all of the Cobra replicas.

Unfortunate that the ad for the Erector set is directed only at boys. There are also a lot of girls out there who enjoy building "realistic, engine-driven models of the world's greatest mechanical marvels!"
